I enjoy March. The promise of spring. Most of the terrain still brown, but with tiny blades of green popping through. The sunlight inching ever-so-slowly into the evening hours, foreshadowing late summer nights.
But what do we do about meals? Sometimes I’m caught between craving the fresh tastes of summer dishes and still being physically cold enough that a warm soup or casserole is most appealing. This is where I find it easiest to plan out the menu with a variety of meals, and then pick and choose throughout the weeks which ones suit our cravings best each day. So today, I will share a two-week menu plan that simply lists and does not assign days.

- Minute steak with noodles
- roasted vegetables
- sourdough bread
- chopped salad with homemade dressing
2. Tacos
- refried beans
- tortilla chips and salsa
- lettuce, tomatoes, onions, peppers, cheese
3. Sloppy joes
- twice baked potatoes
- chopped salad with homemade dressing
- applesauce
4. Crockpot chicken and noodles
- mashed potatoes
- buttered corn
- cherry fluff salad
5. Loaded hash browns
- sausage gravy
- scrambled eggs
- crumbled bacon
- chopped fresh veggies
- pancakes
6. Homemade pizza (twice)
7. Cavatelli
- homemade bread
- lettuce salad

8. Chili
- cast iron jalapeno cornbread
- cut veggies with dip
- cheese & crackers
9. Fried rice with chicken & veggies from freezer
- homemade pork egg rolls
10. Egg casserole
- bacon
- hashbrowns or American fries
- French toast
11. Spaghetti with meat sauce
- sourdough bread
- Caesar salad with homemade dressing
- canned fruit from pantry
12. Chicken enchiladas
- rice with sauteed onions & garlic
- chips with queso
- lettuce, tomatoes, onions, peppers, cheese
This list of 12 dinner meals takes us through the first two weeks of March and incorporates spring salads & fresh veggies with warm meals from the crockpot or the oven. I did allot a day for eating with family, so there will be plenty of meals even with not quite two weeks listed.
I always like to include lunch and snack ideas for myself on my menus. Most days we can find leftovers or pantry items to make something that satisfies, but I’ll list a few of my lunch plans as well.
- Cheesy Italian beans with quick homemade French loaves
- Lentil stew with rice
- Tuna melts
- Apple & cottage cheese breakfast bowl
- Protein balls made with Kodiak Cakes mix
- Homemade granola with yogurt
